Chicken Tikka Fried Rice

The perfect meal to use up leftover rice is fried rice! But it’s even better with the addition of Mina Halal Chicken Tikka bites.

DIRECTIONS

Start by cooking the Mina Halal chicken tikka bites per package instructions and set aside

Finely dice the onion and mince the garlic

Add the vegetable oil in a pan and cook the onion for about 5 minutes until soft. Add the minced garlic and cook for a few minutes

Add the frozen vegetables and a dash of salt and pepper to season the mixture slightly (less than ¼ tsp salt because the soy sauce will be salty)

Cook mixture until vegetables have thawed and softened, for approximately 5-10 minutes

In a separate bowl, combine all the sauce ingredients and mix well

Add the rice to pan to heat up and combine with the mixture. Add a bit more vegetable oil if needed. Add the sauce and mix, then add the chicken Tikka bites after cutting them into smaller pieces

Scramble the eggs in a separate pan and add to the stir fry, or fry the egg sunny side up and top the fried rice (per preference)

Garnish with green onion, cilantro and lime

Ingredients

½ box Mina Halal Chicken Tikka Bites

½ Onion

3 Garlic cloves

3 tbsp (45 mL) vegetable oil

2 Cups (500 mL) frozen peas and carrots

3 Cups (750 mL) pre-cooked rice (refrigerated leftover rice works well)

2 Eggs

Green onion, cilantro and lime for garnish

For the sauce:

1 tbsp  (15 mL)reduced sodium soy sauce

1 tbsp (15 mL) hoisin sauce

2 tsp (10 mL) rice vinegar

¼ tsp (1 mL) hot sauce (or more per preference)
