Grilled Chicken Tikka Tender Spinach Salad

Super fresh, delicious and healthy this meal time salad is full of goodness!


1 pkg Mina Halal® Chicken Tikka Tenders

1 pkg (312 g) baby spinach

½ cup (125 mL) mango, sliced

¼ cup (60 mL) almonds, toasted

¾ cup (175 mL) chickpeas, toasted and spiced

¼ cup (60 mL) radish, thinly sliced

½ cup (125 mL) pomegranate seeds

¼ cup (60 mL) red onion, thinly sliced

1 cup (250 mL) thick greek style yogurt

¼ cup (60 mL) cilantro, chopped

2 tbsp (30 mL) lime juice



1 clove garlic minced

1 tbsp (15 mL) cumin


PREHEAT grill to medium high heat.

BBQ tenders 3 to 4 minutes per side or until an internal temperature of 165 degrees is reached.

COVER loosely with tin foil and keep warm.

IN a small bowl combine yogurt, cilantro, lime juice, cumin, garlic, salt and pepper.

STIR well.

ASSEMBLE salad by arranging spinach on a large platter.

ARRANGE mango, onions, radish and chicken over top.

SPRINKLE with almonds, pomegranate and chickpeas.

DRIZZLE dressing over top.


SERVE with lightly grilled naan or pita bread.
