Chicken Gyros

Delicious Greek marinated chicken, fresh vegetables and creamy tzatziki wrapped in a warm pita.

Ingredients

2 Cloves garlic, minced
1 tbsp (15 mL) Lemon juice
2 tsp (10 mL) Vinegar
2 tbsp (30 mL) Olive oil
2 tbsp (30 mL) Plain yogurt
1 tsp (5 mL) Dried oregano
1 tsp (5 mL) Cumin
1/2 tsp (2 mL) Turmeric
1/2 tsp (2 mL) Allspice
2 Mina™ Boneless Skinless Chicken Breasts
4 Pitas
1 Tomato, diced
1/4 English cucumber, chopped
1/4 Red onion, thinly sliced
1/4 cup (60 mL) Feta cheese, crumbled
1/4 cup (60 mL) Hot banana peppers
1/2 cup (125 mL) Ready prepared tzatziki

DIRECTIONS

POUND chicken using a meat mallet or butterfly to ½” thickness.
WHISK together the first nine ingredients; add to chicken in a large re-sealable plastic bag.
Marinade for at least 30 minutes or up to 4 hours. 

PREHEAT BBQ to medium-high. Lightly coat grill with non-stick cooking spray. Remove chicken and grill for 4-5 minutes per side or until internal temperature reaches 165°F (74°C). Remove from heat and set aside. Discard any leftover marinade in bag. 

WRAP pitas in aluminum foil and place on grill for 5-6 minutes to warm. 

SLICE chicken into ½” (1 cm) strips. Assemble gyros by dividing chicken between pitas and topping with tomato, cucumber, red onion, cheese, hot peppers and tzatziki.
